Charcoal-Grilled Halibut Steaks
Halibut steaks have plenty of flavor and are both tender and moist—provided you don’t overcook them on the grill.
Why This Recipe Works
Sticking and tearing were big issues when we were developing our grilled halibut recipe, but we found that rubbing the heated cooking grate of the grill with a wad of paper towels dipped lightly in vegetable oil helped. Cooking the fish over a single-level, moderately hot fire prevented the halibut from sticking, as fish grilled over a superhot fire will burn.
