Pasta with Chicken Bolognese
The test kitchen is always looking for new uses for ground chicken and found an unorthodox recipe for chicken Bolognese, a northern Italian sauce traditionally made with long-braised ground beef, pork, and veal.
Why This Recipe Works
The challenge in developing our chicken Bolognese recipe was to get rich flavor from lean meat. Using a traditional Bolognese recipe as a starting point, our initial efforts were bland until we found salvation in a pair of common Italian flavorings: pancetta and dried porcini mushrooms. The meat lent backbone and the meaty mushrooms contributed depth to the otherwise one-dimensional chicken Bolognese sauce recipe.
