Dates Stuffed with Parmesan
Fresh dates stuffed with Parmesan and walnuts sounds like an unholy mash up of ingredients, but the trio marry beautifully into a perfect appetizer. The trick, we found, was assembling them into a bite-sized treat.

Success for this stuffed dates recipe depends on good shopping. First of all, the dates should be fresh, plump, and juicy; skip over any that look withered or dry. While the variety of dates available to you may vary, we most like Medjools, which are particularly sweet and dense textured, for our stuffed dates recipe. As for cheese, good-quality, fresh Parmesan is a must. And finally, look for whole walnut halves, not bits and pieces, which we found had a tendency to fall out of the dates once we stuffed them.
