Tarragon-Mustard String Bean Salad

Name: Tarragon-Mustard String Bean Salad
Yield: Serves 6 to 8
Ingredients: 1/4 cup, extra-virgin olive oil; 2 tablespoons, white wine vinegar; 2 tablespoons, Dijon mustard; 1 1/2 tablespoons, lemon juice; 1 tablespoon, honey; 1 tablespoon, finely chopped fresh tarragon; 1/4 teaspoon, black pepper; 1/8 teaspoon, cayenne pepper; 1 tablespoon, salt; 1 pound, green beans, stem ends trimmed; 1 pound, yellow wax beans, stem ends trimmed

This salad is best served cold but can be served at room temperature for a picnic or barbecue. If you can't find yellow wax beans, use 2 pounds green beans. If you can't find tarragon, fresh dill and parsley also work well.
