Why This Recipe Works
To produce an easy-to-roll, sturdy, flavorful Christmas cookie recipe, we found a few steps necessary. First, leaving out the egg whites prevented toughness. Second, a deliciously fatty combination of egg yolks, sour cream, and butter kept the dough short and very flavorful. Third, sandwiching the dough between sheets of parchment or waxed paper ensured that the dough didn’t stick to the rolling pin, as well as minimized the amount of flour required to prevent sticking—too much additional flour can lead to tough Christmas cookies. These steps led to the perfect Christmas cookie recipe.
