Ingredients: 1 pound, carrots, peeled; 1/2 cup, dry-roasted peanuts, chopped; 1/3 cup, chopped fresh mint; 1/3 cup, chopped fresh cilantro; 1/4 cup, thinly sliced scallions; 1-2 , serrano chiles, stemmed and sliced into thin rings; 1 tablespoon, fish sauce; 1 tablespoon, sugar; 1 tablespoon, toasted sesame oil; 2 teaspoons, grated lime zest plus 3 tablespoons juice (2 limes); 1 , garlic clove, minced; 1 teaspoon, table salt
