Ingredients: 4 (8- to 10-ounce) boneless top, sirloin steaks, 1 inch thick, trimmed; 2 teaspoons, kosher salt; 1 1/2 teaspoons, pepper; 1 tablespoon, vegetable oil; 4 tablespoons, unsalted butter, cut into 1-tablespoon pieces and chilled, divided; 2 , scallions, white and green parts separated and sliced thin; 1 tablespoon red or, white miso; 1 , garlic clove, minced; 1/2 cup, chicken broth; 2 tablespoons, soy sauce; 1 tablespoon, dry mustard; 2 teaspoons, packed light brown sugar; 2 teaspoons, unseasoned rice vinegar
