Ingredients: 1 1/2 pounds, sweet potatoes, peeled and sliced 1⁄4 inch thick; 1/4 cup, water; 1 1/2 teaspoons, table salt; 3 ounces, sharp cheddar cheese, shredded (3⁄4 cup); 1/2 cup, all-purpose flour; 2 , large eggs; 4 , scallions, sliced thin; 1/4 cup, chopped fresh cilantro; 2 tablespoons, minced canned chipotle chile in adobo sauce; 1 teaspoon, ground cumin; 1/2 teaspoon, pepper; 1/2 cup peanut or, vegetable oil for frying; , Sour cream; Lemon or, lime wedges
