Why This Recipe Works
For a crispier and lighter version of this heavily seasoned fried chicken, we used a combination of rice flour and cornstarch. To that we added soy sauce, garlic, fish sauce, and sweet chili sauce to create a flavorful tempura-like batter. We fried the chicken until golden and then tossed it with fresh herbs and a sauce echoing the flavors of the tempura batter for a fresh, potent flavor punch.
