Ingredients: 1 1/2 cups (7½ ounces/213 grams), all-purpose flour; 1 tablespoon, sugar, plus about 5 cups to use as pie weight; 1/2 teaspoon, salt; 12 tablespoons, unsalted butter, cut into ½-inch pieces and chilled; 6 tablespoons, ice water
