Ingredients: 2 , peaches, halved, pitted, and cut into ½-inch wedges, or 12 ounces frozen sliced peaches, thawed; 2 tablespoons, granulated sugar; 1/4 teaspoon, salt; 1/2 cup (2 1/2 ounces/71 grams), all-purpose flour; 1/4 cup packed (1 3/4 ounce/50 grams), brown sugar; 1/2 teaspoon, ground cinnamon; 1/8 teaspoon, salt; 3 tablespoons, unsalted butter, melted; 1 1/2 cups (7 1/2 ounces/213 grams), all-purpose flour; 3/4 cup (5 1/4 ounces/149 grams), granulated sugar; 2 teaspoons, baking powder; 1 teaspoon, salt; 1/2 cup, sour cream; 2 , large eggs; 4 tablespoons, unsalted butter, melted; 1 1/2 teaspoons, vanilla extract; 1/4 teaspoon, almond extract; 1/2 cup, peach preserves

Peach flavor can be muted in baked goods. We set out to make a coffee cake that sang loudly of peaches.
