Ingredients: 1 1/2 pounds (680 grams), fresh rhubarb, trimmed; 1 cup (7 ounces/198 grams), granulated sugar; 2 cups (8 ounces/227 grams), cake flour; 1 1/2 cups (10 1/2 ounces/298 grams), granulated sugar; 1 teaspoon, baking powder; 1/4 teaspoon, baking soda; 3/4 teaspoon, salt; 3/4 cup, buttermilk; 5 , large egg yolks plus 3 large egg whites; 8 tablespoons, unsalted butter, melted and cooled; 3 tablespoons, vegetable oil; 1 1/2 teaspoons, vanilla extract; 1/8 teaspoon, cream of tartar; 1 pound (454 grams) (4 sticks), unsalted butter, cut into 32 pieces and softened; 1/2 teaspoon, salt; 4 cups (1 pound), confectioners' sugar
