Leakproofing Springform Pans

In our recent testing of springform pans, we recommended wrapping the pans in foil when using them in a water bath (since none of them are truly leakproof). What's the best way to do this?

It’s frustrating to unmold a cheesecake that was baked in a water bath to find that water has seeped in and rendered the crust soggy. To avoid this, we rely on a tried-and-true technique.

THE BOTTOM LINE: With two sheets of aluminum foil, you can create your own leakproof pan.

1. Tear two sheets of 18 by 12-inch heavy-duty foil, stack the sheets perpendicular to each other, and set the springform pan on top.

2. Carefully fold the edges of the foil against the sides and base of the pan, pressing firmly to seal any gaps.
