What’s the difference between sweetened condensed and evaporated canned milk?

Both sweetened condensed milk and evaporated milk consist of milk from which 60 percent of the water has been removed. The only difference between the two is that sweetened condensed milk, as its name suggests, is highly sweetened, consisting of 40 to 45 percent sugar. This makes it popular for use in sweet custards and puddings. Evaporated milk, which is commonly used in savory custards or cream sauces in which excess moisture is unwanted, can be substituted for regular milk in recipes by adding an equal amount of water (1 cup evaporated milk plus 1 cup water equals 2 cups whole milk). Because of its high sugar content, sweetened condensed milk cannot be substituted for either evaporated or regular milk.
