We typically take a pass on low-fat, turkey-based products such as turkey bacon and turkey jerky, but we wondered if garlicky, highly seasoned turkey pepperoni might pass muster in the test kitchen. Put to the test in our Baked Manicotti with Meat Sauce recipe, the turkey pepperoni was indistinguishable from the standard beef and pork blend and, at 70 percent less fat, a smart substitute. Further taste tests—in sandwiches and on pizza—showed that turkey pepperoni lacks some of the pleasingly greasy qualities of the real stuff. But if you’re looking to cut some fat and calories, it’s a good place to do it.
