No need for pounding—here’s our quick method for producing thin chicken cutlets.

To make chicken cutlets, we recommend cutting boneless chicken breasts in half horizontally rather than pounding them flat. To make cutting the soft meat a little easier, you can freeze the chicken breasts until firm but not completely frozen, about 20 minutes.

MAKING CUTLETS

To cut, use the palm of your hand to hold the chicken breast in place, keeping your fingers straight and parallel to the breast. Using a sharp chef's knife, start at the thickest part of the breast and slice it in half horizontally, producing two even cutlets.
