When a recipe uses just a teaspoon or two of chipotle chiles, here’s how to store the rest of the can.

Canned chipotle chiles are jalapeños that have been ripened until red, smoked, and packed in a tangy tomato-based adobo sauce. Since the size of chipotles varies, in the test kitchen we measure them by minced teaspoons. Could we store leftovers in the freezer, or would they lose their potency? To see, we pureed several cans and froze teaspoon measures on a plastic wrap-covered plate. Once our “chipotle chips” were hard, we peeled them off the plastic and transferred them to a zipper-lock freezer bag.

Weeks later we made a salsa and a casserole with the frozen chipotles and compared them with the same dishes made with chiles from a newly opened can. Most tasters couldn’t tell the two apart. The chipotles will keep for up to two months in the freezer and should be thawed before you use them. The chiles will also last for two weeks in the refrigerator.
