Since the typical antipasto platter can have a dozen or more options, our tasters were faced with some tough decisions when it came to paring down the ingredient list in our Antipasto Pasta Salad. The one ingredient that we couldn't live without was the pepperoncini. Sometimes referred to as Tuscan peppers, in a nod to their region of origin, pepperoncini are most commonly found pickled and packed in a vinegary brine. More tangy than spicy, these little green peppers have a salty, slightly bitter flavor that is great for pizza, sandwiches, salads—or just eating out of the jar.
