Some eggs are easy to peel, while others never seem to let go of their shells. Here's how we handle this pesky task in the test kitchen when a recipe calls for several hard-cooked eggs.

  1. Once the eggs have finished cooking, pour out the boiling water and shake the pan back and forth to crack the shells.
  1. Transfer the eggs to a bowl of ice water. The cracks will allow more air and water to get in between the white and the shell, making it easier to peel the eggs.
  1. Starting at the wider end of each egg, begin to peel away the shell in one strip.
