What’s the best way to center egg yolks?

When we were developing our recipe for Deviled Eggs, we noticed a lot of inconsistency in the location of the yolks. Sometimes they were in the center, sometimes so close to the edge that the whites ripped as soon as we tried to extract the yolk. We went online for ideas on how to center the yolks and found dozens of bizarre tips, everything from spinning eggs like a top on the counter (definitely messy, as one or two eggs will topple onto the floor) to spinning eggs with a spoon as they cook (decidedly dangerous, as splashes of boiling water are inevitable). The best idea involved placing the carton of eggs on its side in the refrigerator the day before the eggs were to be cooked. Evidently, this moves the yolk away from the large end of the egg—which is where the yolk generally settles after packaging—to the center. Now our deviled eggs were truly foolproof.
