Peanut Butter Substitutions

Can you substitute natural peanut butter with no added sugar for the sweetened stuff in recipes?

Can you substitute natural peanut butter with no added sugar for the sweetened stuff in recipes?

To see how natural peanut butter would compare to the winning test kitchen brand, we baked our favorite peanut butter cookie recipe with each. Most tasters noticed a stronger, slightly savory peanut flavor in the natural peanut butter cookies, which several preferred. An even exchange of natural for processed peanut butter produced perfectly fine results, but to mimic the sweetness of processed peanut butter, add 1 tablespoon of white sugar per 1 cup of natural peanut butter. Because natural peanut butter is usually not homogenized, the oil from the peanuts floats to the top of the jar; be sure to stir the peanut butter thoroughly before using it to bake.
