Where can you find the very best Filipino food in the U.S.? Bryan Roof discovers a strong contender at Oakland, California’s FOB Kitchen, where chef and owner Janice Dulce crafts savory, sour sinigang, a cornerstone of Filipino cuisine.

But then there’s Bobby Punla and Jan Dela Paz of pop-up restaurant Likha, who invite Bryan to sample their take on sisig, a traditional Filipino street snack of chopped pork, onions, and chiles made sour with vinegar or calamansi juice.

If upscale food is more your style, look no further than Francis Ang of fine-dining establishment Abacá. Francis took the pain from a typhoon that devastated parts of the Philippines and turned it into a fundraiser that piqued his interest in creating and serving upscale Filipino food.
