How to Make Grilled Cheese in the Oven
- Line a rimmed baking sheet with foil (for easy clean-up and to prevent melty cheese from sticking).
- Slather one side of each piece of bread with your fat of choice. (Butter is classic, but mayo works very well, too! If you use butter, melt it first and brush it on for even coverage. And if you want to get wild, spike the butter with some rendered bacon fat.)
- Arrange half the bread fat side down on the baking sheet, pile on the cheese and whatever other fillings you want (ham, tomato, crisp bacon, onion, spinach, chutney . . . ), and top with the rest of the bread fat side up.
- Bake the sandwiches at 425 degrees on your middle oven rack until the cheese is melted, about 15 minutes, flipping them halfway through baking.
- Let them cool for 5 minutes, or if you don’t care about the health and safety of your tongue, don’t.
