What’s a surprising, festive party dish that goes well with champagne?

My answer is going to sound like a cop-out, but trust me, it’s the truth: anything and everything.

I’m not kidding. As far as I’m concerned, champagne (or other bubbly drinks, such as prosecco, cava, or nonalcoholic sparkling cider) is legendarily versatile and adaptable. It’s equally at home with fancy caviar or a simple plate of scrambled eggs. And it’s dynamite with pizza, especially a pizza with exciting ingredients, such as Fig, Gorgonzola, and Prosciutto Pizza.

This lineup of toppings—sweet fig, creamy Gorgonzola cheese, savory prosciutto, and peppery arugula—takes just minutes to put together with store-bought pizza dough. Do yourself a favor and take your dough out of the fridge about 20 minutes before you go to roll it out, just to give it a chance to relax. If it springs back on you, give it a minute and try again.

It's party time! So if you have people coming over to celebrate, use your pizza cutter to cut this one into smaller squares, which folks will have an easier time walking around with as they balance a glass of bubbles in the other hand. Or, if it’s just you and your nearest and dearest, serve this with a side salad or bowl of soup for supper.
