Triple-Chocolate Cookies
Triple-Chocolate Cookies are a decadent riff on classic chocolate chip cookies. We used three types of chocolate—unsweetened, bittersweet, and semisweet—for the most complex flavor. We beat the sugar and butter together until smooth, thick, and pale before we added the melted chocolate and flavorings. Finally, we carefully folded the dry ingredients (blended together in a separate bowl) into the wet ingredients. Coffee powder and a lot of vanilla lent dimension to the deep chocolate flavor. Allowing the soft cookie dough to sit at room temperature for a few minutes firmed it up enough for us to portion it neatly.
Makes 26 cookies
The key to the fudgy texture of these cookies is letting them cool directly on the baking sheets. Avoid using bittersweet bar chocolate--the cookies will be too rich and won't hold their shape.
