Toasted Almond Icebox Cake

This old-fashioned no-bake cake seems a simple-enough ensemble of wafer cookies and whipped cream, but the details can make all the difference. Our Toasted Almond Icebox Cake recipe starts with Nabisco Famous Chocolate Wafers, which have the best texture and cocoa-rich flavor for this cake. Beating the almond extract-infused whipped cream only to soft peaks prevented it from breaking down as the icebox cake chilled. We made sure to chill the Toasted Almond Icebox Cake for at least six hours. The longer the cake sat, the better the texture and flavor became. We finished the cake with a sprinkling of toasted, sliced almonds and a few crumbled wafers.

Serves 8 to 10

You will need a serving platter that is at least 12 inches long to accommodate this long tube-shaped cake.
