Sweet 'N' Smoky Jerk Chicken

Our Sweet ‘n’ Smoky Jerk Chicken recipe features some of the keynote flavors of jerk seasoning, but nontraditional ingredients like smoky chipotle peppers and sweet molasses add interesting flavor variations. We used a food processor to quickly blend the ingredients into a smooth paste. We rubbed the paste thoroughly over and under the skin of the chicken parts and let the chicken sit for at least two hours to allow the seasoning to penetrate the meat. Cooking the chicken over a two-level fire gave us a well-browned exterior and a juicy interior.

Although not a traditional Jamaican ingredient, chipotle chiles create a variation with an appealing smokiness, which is balanced nicely by the sweetness from additional molasses.
