Sesame Noodles with Chicken and Asparagus

To ensure the chicken in our Sesame Noodles with Chicken and Asparagus browned properly, we patted the meat dry with paper towels. We also sliced it thin so it cooked quickly. We found that any long-strand pasta, such as spaghetti or fettuccine, worked well in our recipe for Sesame Noodles with Chicken and Asparagus. To save time and effort, we used the same pot of salted water to blanch the asparagus and cook the pasta. Toasted sesame oil has a much richer flavor than regular sesame oil and was well worth searching out; however, regular sesame oil worked, too. Oyster sauce lent an essential savory flavor to this dish. Thinning the peanut butter with some of the reserved pasta water ensured a creamy sauce.
