Low-fat cottage cheese and low-fat sour cream made a rich-tasting, creamy base for our Reduced-Fat Creamy Pesto Dip that tasters loved. We pureed the low-fat cottage cheese with boiling water to eliminate its graininess and improve the dip’s creamy texture. Assertive Parmesan cheese added bold flavor to our Reduced-Fat Creamy Pesto Dip.
Traditional recipes have 510 calories, 51 grams of fat, and 11 grams of saturated fat per 1/3 cup serving. Our changes brought the numbers down to 120 calories, 7 grams of fat, and 3 grams of saturated fat.
Makes about 2 cups, enough for 6 servings
Cherry tomatoes pair beautifully with the bright basil flavor in this dip.
