Quick Strawberries with Balsamic Vinegar

While it may sound odd at first, strawberries splashed with balsamic vinegar is a classic Italian combo. While searching for a way to improve the flavor and mellow the sharpness of supermarket quality vinegar, we found that we could “doctor” inexpensive supermarket balsamic vinegar with sugar and lemon juice. Boiled to a thick glaze, the flavor was very similar to that of the expensive stuff. We macerated the sliced strawberries with a little brown sugar to boost their flavor and draw out some of their juices. An unexpected shot of ground black pepper accented the flavor of the berries and gave us our ideal Quick Strawberries with Balsamic Vinegar recipe.
Serves 6
This Italian dessert is elegant but very simple. Serve the berries and vinegar as is or with a small scoop of vanilla ice cream. If you don't have light brown sugar on hand, sprinkle the berries with an equal amount of granulated sugar.
