Potato and Sausage Breakfast Popover Casserole
From Cook's Country
For our Potato and Sausage Breakfast Popover Casserole to rise and expand properly, the moisture in the batter needed to steam, which necessitated intense heat. Preheating both the oven and the pan before adding our recipe’s mixture achieved this. Cooking the potatoes in the microwave, then browning them quickly in a skillet saved time as we prepared our Potato and Sausage Breakfast Popover Casserole recipe. To make sure they stayed crisp, we placed the potatoes on top of the popover batter.

This recipe requires careful timing. Once the batter is prepared and set aside to rest, the potatoes can be microwaved while the sausage is cooking. While the potatoes are pan-fried, the springform pan (with the cooked sausage) should be preheated in the oven.
