Mint Chip Icebox Cake
This old-fashioned no-bake cake seems a simple-enough ensemble of wafer cookies and whipped cream, but the details can make all the difference. Our Mint Chip Icebox Cake recipe starts with Nabisco Famous Chocolate Wafers, which have the best texture and cocoa-rich flavor for this cake. Beating the peppermint extract-infused whipped cream only to soft peaks prevented it from breaking down as the icebox cake chills. We made sure to chill the Mint Chip Icebox Cake for at least six hours. The longer the cake sat, the better the texture and flavor became.
Serves 8 to 10
If you prefer, you can decorate the cake with chocolate wafers crushed into coarse crumbs or chocolate shavings. You will need a serving platter that is at least 12 inches long to accommodate this long tube-shaped cake.
