Low-Fat Meaty Lasagna
From Cook's Country
Most meat lasagnas made with ground beef are low in fat—and flavor. We wanted a low-fat lasagna recipe with big favor and lean ingredients. We achieved this using two sauces: meat sauce and a cheesy white sauce, which we added to the top of the lasagna, where its flavor was more pronounced. Ground turkey, finely chopped mushrooms, and other vegetables lent our low-fat lasagna recipe “meaty" flavor and texture—without the added calories.
Traditional meat lasagna has 600 calories, 30 grams of fat, and 16 grams of saturated fat per main-course serving. Our Low-Fat Meaty Lasagna has 360 calories, 11 grams of fat, and 3.5 grams of saturated fat per main-course serving.

For bolder flavor, add 1/4 teaspoon red pepper flakes to the meat sauce and a pinch of nutmeg to the white sauce. If you don't have a food processor, finely chop the vegetables by hand.
