Low-Fat Chocolate Mousse

Could we make a low-fat version of chocolate mousse, a recipe made mainly of whipped cream and chocolate? We wanted a Low-Fat Chocolate Mousse recipe that preserved the rich chocolate flavor and kept the irresistibly silky, fluffy texture of traditionally chocolate mousse. To do this, we made an Italian meringue by beating egg whites until fluffy, then cooking the eggs with hot sugar syrup. This fat-free mixture gave us the volume and texture we were looking for, without a drop of cream. Semisweet chocolate and Dutch-processed cocoa added rich chocolate flavor to our Low-Fat Chocolate Mousse recipe, and the fat in white chocolate chips tempered the harshness of both. Traditional chocolate mousse has 380 calories, 32 grams of fat, and 19 grams of saturated fat per 6-ounce serving. Our Low-Fat Chocolate Mousse has 230 calories, 10 grams of fat, and 5 grams of saturated fat per 6-ounce serving.

The meringue and chocolate mixture are combined in 2 stages so the meringue doesn't collapse. For the best texture, chill the mousse overnight.
