Individual Blueberry-Pecan Buckles
We developed an Individual Blueberry-Pecan Buckles recipe to dress up this homey dessert featuring fresh fruit combined with a sweet, cakey topping. By using the food processor, we kept prep work and dishes to a minimum. Processing the pecans with sugar until finely ground before adding the butter and remaining ingredients ensured a smooth, well-incorporated batter. Coating the ovensafe ramekins with vegetable oil spray prevented our Individual Blueberry-Pecan Buckles from sticking fast.
Serves 6
You can substitute 2 cups frozen blueberries, thawed, drained, and patted dry, for the fresh berries. The buckles can either be served in their ramekins or you can run a paring knife around the edges of the ramekins and flip the buckles out onto individual plates (flip them right-side up again before serving). Serve with Crème Anglaise (see related recipe), vanilla ice cream, or Whipped Cream (see related recipe).
