Hearty Beef Stew

Browning the meat and onions for our Hearty Beef Stew on the stovetop intensified their flavor and deepened the color of the stew. Steaming the vegetables in a “hobo pack" of aluminum foil on top of the meat and broth prevented them from drying out. We stirred them into the stew just before serving so that they maintained their firm texture. A little soy sauce intensified the flavor of our Hearty Beef Stew and darkened the color of the broth. Thickening the stew with instant tapioca avoided any starchiness in the broth.

Serves 6 to 8

If you’re going to be away from your slow cooker for more than 10 hours, cutting the vegetables into larger, 1 1/2- to 2-inch pieces will help them retain their texture.
