Flavored Salts for Fries
From Cook's Country
We found it was easy to turn ordinary salt into an interesting seasoning for fries and more by adding other ingredients. For an Italian-Flavored salt, we added minced fresh rosemary and grated lemon zest. For salt with North African or Middle Eastern flavors, we added cumin, coriander, paprika, and cayenne. For a Southwestern-flavored salt, the seasonings are chili powder, garlic powder, black pepper, and cayenne.
It's easy to jazz up plain fries (or almost anything) by flavoring the salt. We prefer to use kosher salt because its larger crystals add crunch. Use any of these three variations for our Super-Crisp Steak Fries (see related recipe) or any other savory seasoning application. If you prefer, substitute 1 1/2 teaspoons table salt for the kosher salt.
