Balsamic Glazed Onions
A glazed pearl onion recipe is the perfect accompaniment to a holiday menu, but peeling all those onions can be time-consuming. We wanted a glazed pearl onions recipe that used prepeeled frozen pearl onions because they save time and do not need to be thawed before cooking. We cooked the onions in butter over medium heat while still frozen until lightly browned. They defrosted quickly in the skillet’s heat, and the browning intensified the onions’ flavor and deepened the color of the finished dish. We simmered the browned onions in chicken broth sweetened with brown sugar. This combination made for deeply flavored onions with an attractive luster.
Serves 4
Do not thaw the onions before adding them to the skillet. Fresh thyme, sage, or oregano can be substituted for the rosemary.
