Ingredients: 4 ripe, peaches, peeled, halved, pitted, and cut into 1/2-inch wedges, or 20 ounces frozen peaches; 1/2 cup (3 1/2 ounces/99 grams), sugar; 3/4 teaspoon plus ⅛ teaspoon, table salt; 2 teaspoons, lemon juice; 2 cups (10 ounces/283 grams), all-purpose flour; 2 teaspoons, baking powder; 6 tablespoons, unsalted butter, melted and cooled; 1/2 cup, whole milk; 2 quarts, peanut or vegetable oil, for frying
