Name: Red Wine-Orange Sauce

Ingredients: 6 tablespoons, unsalted butter, cut into 6 pieces and chilled; 3 , shallots, minced; 1 1/2 tablespoons, tomato paste; 1 tablespoon, sugar; 4 , garlic cloves, minced; 1 tablespoon, all-purpose flour; 3 cups, beef broth; 1 1/2 cups, red wine; 1/3 cup, orange juice; 1 1/2 tablespoons, Worcestershire sauce; 1 sprig, fresh thyme
