Ingredients: 3 1/4 cups (16 1/4 ounces/461 grams), all-purpose flour; 1/4 cup (1 3/4 ounce/50 grams), sugar; 1 tablespoon, instant or rapid-rise yeast; 1 1/2 teaspoons, red pepper flakes; 1 1/4 teaspoons, salt; 1/2 cup, warm water (110 degrees); 2 , large eggs plus 1 large yolk; 4 tablespoons, unsalted butter, melted; 6 ounces (170 grams), Monterey Jack cheese, cut into 1/2-inch cubes (1 1/2 cups), room temperature; 6 ounces (170 grams), provolone cheese, cut into 1/2-inch cubes (1 1/2 cups), room temperature; 1 , large egg, lightly beaten; 1 teaspoon, red pepper flakes; 1 tablespoon, unsalted butter, softened
