Ingredients: 3 tablespoons, extra-virgin olive oil, plus extra for drizzling; 6 ounces, chorizo sausage, halved lengthwise and cut into 1/2-inch slices; 8 ounces, mozzarella cheese, shredded (2 cups); 4 ounces, Manchego cheese, shredded (1 cup); 4 ounces (1/2 cup) small-curd, cottage cheese; 1/4 teaspoon, dried oregano; , Salt and pepper; Pinch, cayenne pepper; 1 pound store-bought, pizza dough, room temperature; 6 , large eggs; 2 , scallions, sliced thin; 2 tablespoons, minced fresh chives
