Yield: Serves 4 to 6
Ingredients: 6 cups seedless, watermelon, cut into 1-inch pieces; 1 1/2 teaspoons, sugar; 1 , shallot, sliced into thin rings; 3 tablespoons, white wine vinegar; 1/4 teaspoon, red pepper flakes; , Salt and pepper; 1 English, cucumber, peeled, quartered lengthwise, seeded, and cut into 1/2-inch pieces; 3 tablespoons, extra-virgin olive oil; 1/2 cup, pitted kalamata olives, chopped coarse; 1/2 cup, fresh basil leaves, torn; 3 ounces, feta cheese, crumbled (3/4 cup)
