Ingredients: 2 (14.5-ounce) cans, diced tomatoes, drained well; 2 tablespoons, chopped fresh basil; 2 tablespoons, extra virgin olive oil; 2 , garlic cloves, minced; 1/4 teaspoon, salt; 1 cup, water, heated to 110 degrees; 1 tablespoon, extra virgin olive oil, plus additional for brushing dough; 1 tablespoon, sugar; 1 envelope (2 1/4 teaspoons), instant or rapid-rise yeast; 2 3/4 cups, all-purpose flour, plus additional as needed; 1/4 cup, grated Parmesan cheese; 1 teaspoon, salt; 2 1/2 cups, shredded mozzarella cheese
