Tomato Butter

Name: Tomato Butter
Yield: Serves 48 (Makes about 3 cups)
Ingredients: 3 pounds, tomatoes, peeled, cored, seeded, and chopped; 1 , onion, grated on large holes of box grater; 2 cups, packed light brown sugar; 2 teaspoons, ground ginger; 1 teaspoon, turmeric; 1 teaspoon, paprika; 1/8 teaspoon, cayenne pepper; 1/4 cup, juice from 2 lemons
