Similar to Lady Baltimore Cake, Pink Azalea Cake is a three-layer white cake swathed in billowy seven-minute icing. It's the pretty pink hue-of the middle cake layer, the frosting, and the fruit-nut filling-that gives the cake its name and makes it perfect for springtime. Pink Azalea Cake is a cousin to other fanciful flower-named cakes that were popular mid-century, such as the Brown-Eyed Susan and the Daffodil Cake.
