Ingredients: 1 , onion, chopped rough; 1 , red bell pepper, seeded and chopped rough; 1 piece, fresh ginger (6 inches), peeled and chopped rough; 6 , garlic cloves, peeled; 2 tablespoons, tomato paste; 2 tablespoons, vegetable oil; 6 ounces, pineapple juice, canned, frozen concentrate; 12 ounces, apricot jelly (1 jar); 1/4 cup, packed dark brown sugar; 1/4 cup, soy sauce plus 2 tablespoons; 1/4 cup, rice vinegar plus 1 tablespoon; 1/4 teaspoon, red pepper flakes; 3 pounds, baby back ribs (2 racks, about 1 1/2 pounds each), halved (see note); 1 tablespoon, cornstarch

The best sweet and sour ribs brown in the oven while their sauce reduces to a potent, sticky glaze. We wanted to make this dish in a slow cooker, where browning and evaporation are minimal.
