Name: Garden of Eden Sauce
Yield: Serves 4 to 6 (Makes enough to sauce 1 lb of pasta)
Ingredients: 2 large, tomatoes, cored and chopped; 1 , yellow or orange bell pepper, seeded and chopped; 1 , medium cucumber, peeled, seeded, and chopped; 8 ounces, fresh mozzarella cheese, cut into 1/2-inch chunks; 2 , scallions, sliced thin; 1/2 cup, chopped fresh basil; 1 teaspoon, salt; 1/3 cup, extra-virgin olive oil; 2 tablespoons, red wine vinegar; 1 , garlic clove, minced; 1/2 teaspoon, ground cumin; 1/2 teaspoon, dried oregano
