Ingredients: 1 1/4 cups (6¼ ounces/177 grams), all-purpose flour; 2 cups (6 ounces/170 grams), old-fashioned rolled oats; 1/2 teaspoon, baking soda; 1/2 teaspoon, salt; 3/4 cup (4½ ounces/128 grams), butterscotch chips; 16 tablespoons, unsalted butter; 1 cup (7 ounces/198 grams), packed dark brown sugar; 2 teaspoons, vanilla extract; 1 , large egg; 1/4 cup (1½ ounces/43 grams), butterscotch chips; 2 tablespoons packed, dark brown sugar; 1 tablespoon, water; 1/8 teaspoon, salt

This bake-sale favorite combines oatmeal cookie dough with a bag of butterscotch chips. We found these versions far too sweet, and we wanted a chewier, less crumbly texture.
