Ingredients: 4 tablespoons, unsalted butter, plus extra for greasing baking dish; 3 pounds, russet potatoes (about 6 medium), peeled and cut into 1-inch chunks; 2 , (5-ounce) packages Boursin cheese spread; 1/2 cup, milk; 3/4 teaspoon, table salt; 1/4 teaspoon, ground black pepper; 3 tablespoons, plain bread crumbs; 3 tablespoons, grated Parmesan cheese
